My Cheap and Simple Dinner
This is my normal dinner, it is super easy and fast to make. I really like that there is no prep time you just throw everything together and heat it up! It is a great dinner that most people can find a perfect combination that they will love. It is so easy to change up the combination of vegetables and seasoning that you use.
Ingredients:
Olive Oil - Just a little bit
Frozen Vegetable Mixes- as much as you want! (i.e. trio pepper mixes, zucchini, corn, peas, green peas, & carrots)
Grilled chicken- 3 oz (I typically precooked frozen chicken so you do not have to worry about it going bad)
Beans- 1/4 cup (I typically use black beans)
Avocado -1/4 of a large Avocado
Seasoning - to taste (cajun seasoning, salsa, sriracha, hot sauce, teriyaki sauce, BBQ sauce)
Preparation:
All you need to do is put the stove on medium heat, put some olive oil on the pan with the frozen vegetables, grilled chicken let it all heat up.
After the food is thawed and on the warm side add in the avocado and beans .
Heat until it is warm enough to eat.
Enjoy your easy, delicious, healthy meal!
Feel free to experiment with combinations! Try new seasonings and vegetables. Try to make the meal heavy on vegetables and include a variety of colors - try to eat the rainbow. Remember that everything is optional, you can always change the cooking oil and vegetables to be your favorites. Another key to keep this meal healthy is to check the ingredients for additional sugars and fats in frozen vegetable mixes. Ideally the vegetable mix will just list vegetables in the ingredients.

Reading Food Labels: What to look for
Limit Sugar
Be careful foods that are typically viewed as "healthy" typically have a lot of added sugar. It is recommended to stay under 50 grams of sugar per day. This number comes from having less than 10% of your calories coming from sugar, so in a 2,000 calorie diet that leaves you with 200 calories, divided by 4 (because there are 4 calories/gram) leaving you with 50 grams of sugar. Be wise and read those labels!
Ingredients
Look at the ingredients of the food that you buy, sometimes you think you are just buying frozen vegetable but sometimes manufacturers add other ingredients making one option less ideal. You will be surprised how many ingredients they can fit into a simple small bar.
